Our Story
Born from Two Cultures. Driven by One Passion.
Chef Arjun & Chef Maria
Co-founders · Mazala Kitchen
The Beginning
A Kitchen Table Experiment That Became a Restaurant
It started at a potluck in Milwaukee. Arjun brought his grandmother's butter chicken. Maria brought handmade corn tortillas from her family's recipe. Someone put them together. The table went silent — then erupted.
What began as a happy accident became an obsession. Two years of weekend pop-ups, farmer's market stalls, and catering gigs led to one conclusion: Wauwatosa needed a permanent home for this food.
Mazala Kitchen opened its doors with six menu items and a line around the block. Today we serve over 500 regulars weekly — and we're just getting started.
Our Philosophy
We Don't Compromise on Flavor
"The best fusion isn't about mixing everything together — it's about finding the moments where two traditions speak the same delicious language."— Chef Arjun, Co-founder
Made With Love
Every recipe began in someone's home kitchen. We honor that tradition with scratch cooking every single day.
Bold Flavors Only
We never tone down spice to play it safe. Real masala heat. Real chili depth. We trust your palate.
Two Cultures, One Table
Food is the universal language. Indian and Mexican cuisines share warmth, community, and the joy of bold seasoning.
Premium Ingredients
We source high-quality, fresh produce — no shortcuts. If it doesn't taste exceptional, it doesn't go in the bowl.
How We Source
From Field to Tortilla.
Quality You Can Taste.
Our spice blends are sourced directly from Indian spice merchants — the same ones Arjun's family has used for three generations. Our masa comes from a Milwaukee tortilleria that's been serving the community since 1987.
We believe you can taste the difference between food made with care and food made for convenience. That's why we'll never sacrifice quality for speed — even when the line is out the door.
Come Experience It
The story is best told through the food. Come in, order something bold, and taste the fusion.
